Apple Walnut Pancakes

Apple Walnut Pancakes:


1 1/4 cups self rising flour
1 cup of skim milk or Almond breeze ( I used Almond Breeze)
1 egg white
2 TBS plain non fat yogurt (used as a fat substitute)
1/4 cup chopped walnuts
1/2 cup chopped apple
1/2 tsp ground cinnamon


Mix all ingredients together just until well incorporated.  Fry in 1/4 cup measurements until done.  Makes 8 pancakes.


Nutritional info for each pancake: Calories=112, Fat = 3 gm, Carbs=21 gms, Protien=3 gms


The walnuts are great for adding fat but fat with the great omega 3's and protien that butter doesn't supply.  The apples add the sweetness that sugar would, but has more nutritional value.  I served these with sugar free syrup, but I think a light dusting of powdered sugar would be about the same in calories but without the artificial sweeteners, which I am trying to get away from.
